No, your memory is not faulty: there was indeed a time when the ads were only in-between videos on Youtube... not in the middle of them.
Which is why I use the Brave Browser (which is based on Chrome) - it blocks all ads and trackers. Some technophiles say Brave itself tracks your behavior, but AFAIK it's only the way many apps do - anonymized and for bug-tracking purposes. But who knows. We're all tracked everywhere on the web, anyway. If I have to pick my battles - and apparently in this day and age, online, we do - then I'd rather be tracked by a browser that blocks all the OTHER trackers and ads, then not have ads and trackers blocked at all.

Pros and cons of Brave Browser are listed at the end of the Wikipedia article, but I haven't experienced any of those issues.
Brave is funded by its own cryptocurrency, but you can turn off the ads on the Brave home screen if you want (I always do).
And, if you so desire, you can download and install it from https://brave.com/ - for Windows or Android smartphone.
I've been using it for a few years (last 2 phones - 3, including the one I have now) and ! have no complaints. It always blocks ALL ads on Youtube, for me - and that's with the default settings. I don't have to do a thing except install it. Right out of the box it blocks the maximum trackers and ads.
And, since it's based on Chrome, if you have any browser extensions in Chrome that you like, you can install them in Brave too!
